Culinary treats - this page is a look at some possible options 


Our hope is to cater our cuisine from the Caribbean around us. Fresh fruits, vegetables, and the bounty that the islands has to offer will make our menus change da
ily. Even our drinks will be island brewed and blended so prepare not just for island food but also island beers, rums, and cocktails!

Fresh Fruits

Today we have fresh papayas, mango, tangerines, grapefruit, and Bananas.  We got all fruit fresh from the local market yesterday and would love to make a freshly squeezed juice, a fruit salad, or a fruit smoothie just for you.

Starches

We have pancakes made to order (so feel free to mix in some fresh fruit), our world famous French toast (Irish toast really you will love it), Fresh Bread made every morning (so expect warm breakfast rolls), and let us not forget Caribbean porridge (the local sugars are so fresh they have a truly unique flavor).

Individual Full Breakfasts

We also have the complete breakfasts create a combo of eggs (anyway you like), toast, sausage, bacon (not recommended before a dive), fried tomato, Beans, hash browns and with a little notice we can get any special order your heart desires.

Coffee and tee

The pantry is stocked with the local coffees so now is the time to see which Caribbean coffee you like the best. Unusual teas are also very popular in the region so take a chance on a new variety or stick to the tried and tested.

Lunch

Today we have a wonderful bounty from the sea. We have an amazing, fresh as can be, Caribbean yellow tail snapper. We will be slow roasting the fish on a bed of sweet peppers and herbs until the meat melts in your mouth.

Starter

We will begin with an island salad of romaine lettuce, sweet peppers, and carrot. The dressing will be fresh Caribbean zesty fruit vinaigrette.

Main Course

We will serve with the main course a Caribbean sweet potato mash, steamed garlicky local spinach, and, a delicious regional vegetable, some candied plantain.

For desert we will happily create some fruit salad with whipped cream.

We are happy to cook vegetarian so please advise us of any dietary requirements and we will be happy to arrange it.

Starter

Our conch ceviche with lemon and dill is sure to whet your appetite.

Main course

As we will be camping on the beach tonight we are grilling some fresh Mahi-Mahi

To accompany we are grilling local squash and zucchini and rubbing them with local herbs and flavours (secret recipe), BBQ corn and garlic butter fresh from the market, and some charred yellow yam.

Desert

As a special treat tonight we can enjoy some fire kissed coconut this is a popcorn type desert but sweet and crunchy.

 

Midnight snack

Leftovers and cereals will be in the fridge or cooler if we stay on the beach, so dig in and enjoy.
